Coffee and whiskey. Can you think of a better combination? Especially when it’s cold outside? There’s a welcome bite to the coffee/whiskey combo, but each sip is mellowed by the rich, decadent cream on top. Plus it jacks you up. I mean, this is Red Bull and vodka before Red Bull and vodka. I recently had an Irish Whiskey at the Jameson Distillery in Middleton, Ireland and I got to learn the origin story behind the cocktail. It’s not as ancient as you’d think. The drink actually developed on the coast of Southwest Ireland, in the ‘40s, where U.S. pilots would land and ask for a cup of coffee, then put whiskey in it. You know, for safety.

At least, that’s one story. This is Ireland, so everything has at least two or three alternative tales attached to it.

Check out the simple recipe below and whip one (or two) of these up to kick off the Holiday season properly.

Irish Coffee

1.5 ounces Jameson Irish Whiskey
2 shots of espresso (or five ounces of coffee)
Fresh whipped cream

You can also add brown sugar if you’re into that. Or some shaved peppermint if you’re feeling jolly.
