Ending U -- deb[U]nked
Self-destruct is another ability that never really comes into play in the main game, but it's necessary for unlocking Ending U. It can be activated on a PS4 controller by holding down L3 and R3 for a couple of seconds or on a keyboard by pressing down B.
With this mind, go to the bunker. Then when you get inside, activate the self-destruct function. This will cause a chain reaction, blowing up the entire headquarters.

Ending V -- reckless bra[V]ery
For Ending V, go back to the same area of the game as the city e[s]cape ending. Only this time, don't abandon Devola and Popola.
Instead, help them destroy the robots and don't hack the tower. You'll eventually wipe out all the enemies and they'll chastise you for your reckless bravery.

Ending W -- broken [W]ings
There are few ways to activate Ending W. The easiest is to load up the first chapter where 2B and the other YoRHa units are flying to the factory. Instead of reaching the factory, go out of your way to get hit by the huge laser blasts and die. The credits will then roll.

Ending X -- time to rela[X]
To discover the time to rela[X] ending, go to the scene where A2 defends a corrupted 9S from a bunch of other YoRHa agents.
When given the opportunity to fight, don't take it. Instead opt to run across the bridge away from the shopping complex. 2B will die and a new ending will trigger.

Ending Y -- head[Y] battle
Ending Y requires you to fight the Emil superboss in the desert. This battle is available after doing the following: beating the quest Emil's memories, tackling the first Emil superboss in the underground lair and upgrading all your weapons to the max.
After you've done the above, go find the boss and, when one of the Emil heads starts its detonation sequence, let it self-destruct. Ending Y will play not long after.

Ending Z – over[Z]ealous
The last ending to get in the game is an easy one. Just transport to the resistance camp as A2 just prior to meeting Pascal for the first time. Go outside to the entrance of the camp and help Pascal by destroying the other robots. He'll start trying to convince you he's not violent. Don't listen to his pleas and attack him instead.
