A Vegan Butcher Shop Is Coming to Bed-Stuy

“Vegan butcher” may sound like an oxymoron, but don’t tell the folks at Monk’s Meats. The vegan operation has announced that they will open a vegan butcher shop in Bed-Stuy, Brooklyn next spring.

The “vegetarian butcher shop and delicatessen” recently completed a Kickstarter campaign to open a shop at 477 Gates Avenue selling steaks, burgers, sausages and “vegan options you would expect to find in a meat shop,” co-founder Chris Kim said in an interview with DNAinfo.

The shop will be strictly for take-out, and will feature sandwiches, vegan meats, cheese and pickles, all of which will be made on-site. Monk’s began as a successful stand at Smorgasbord, where they debuted in 2013. The operation makes its own seitan, a wheat-based protein that they eventually began smoking at Monk’s Vegan Smokehouse.
