Sure, you’ve seen carrots used in a salad or maaaaaybe as a garnish for a Bloody Mary, but have you ever seen a carrot cocktail?
Carrot cocktails have started to become a thing around the country, with drinks being made with everything from carrot-infused vodka to straight carrot juice with a liquor twist.
It’s certainly an interesting trend. As someone who is, in general, a bit apathetic abount the vegetable, I’m not sure it’s something I would gravitate toward on a cocktail menu, but it is something I could see reaching for when I wanted to be a bit “healthier” with my beverage selection. Who says cocktails can’t be healthy, right?

This drink is a variation of the classic Vesper martini. The cocktail features Simple Vodka, which is sustainably produced and donates 20 meals per bottle produced to U.S. hunger relief organizations. The vodka is infused with leftover carrot shavings from the Temple Court kitchen before mixing it with gin and Bergamot Liqueur.
